  • 1½ sticks room temperature butter
  • ¾ cup sugar
  • ½ teaspoon vanilla extract
  • ¾ cup whole wheat flour
  • 1 cup all-purpose flour
  • Pinch of salt
  • ¼ teaspoon baking powder
  • ½ cup “no sugar added” jam of your choice

Directions

  1. Preheat oven to 350 degrees.
  2. In the bowl of a stand mixer (or use a hand mixer), cream butter and sugar together. It should look fluffy and take about 5 minutes. Add the vanilla.
  3. In a separate medium bowl, stir together whole wheat flour, all-purpose flour, salt, and baking powder. Turn the mixer on low speed and gradually add the flour to the butter mixture. Mix just until the flours are incorporated.
  4. Portion the dough using a tablespoon measuring spoon into 1¼ inch balls. Place on a baking sheet. Press in with thumb and fill with a teaspoon of desired jam.
  5. Bake for 20 to 25 minutes or until the edges are golden brown. Let cool and serve.
